Nutrients and Antioxidants in Tropical Underutilized Crops
Research at Czech University of Life Sciences PragueContents of macro and micronutrients are determined in tropical underutilized and neglected crop species (e.g. fruits and vegetables) by standard nutritional and phytochemical analytical techniques. Their antioxidant activity is evaluated using standardized in vitro methods. The result are used for development of novel plant-derived food products such as dietary supplements and functional foods rich of antioxidants, vitamins, minerals, etc. In both developing and developed countries, these products may contribute to reduction of malnutrition.
